Yo Soy la Sriracha Pancit

1 (8 ounce) package rice noodles
1 lb shrimp (fresh or frozen thawed) shelled and deveined *
1 cup Yo Soy la Sriracha Sauce, divided in half
2 cups cabbage shredded (may use bok choy)
1 cup carrots, thinly sliced
1 cup onion, thinly sliced
½ teaspoon salt
½ teaspoon white pepper
1 tablespoon olive oil
2 tablespoon olive oil
¼ cup olive oil
½ cup of scallions
1 lemon cut into 6 wedges
Marinade the shrimp in ½ cup of Yo Soy la Sriracha Sauce for a minimum of 30 minutes. Soak rice noodles per package directions. Drain shrimp and discard marinade. Heat 1 tablespoon of olive oil and saute shrimp and set aside. Heat 2 tablespoons of olive oil and saute carrots till slightly tender. Add cabbage and onions cook till all vegetables are tender. Next add noodles and the rest of Yo Soy la Sriracha Sauce and olive oil. Continue cooking and mixing till noodles are tender. Serve with scallions and a wedge of lemon.
   * Chicken, pork, or beef may be substituted for shrimp.  You will want to marinade at least 2 hours or overnight.
