1 16-ounce package ready-made beef tamales
1 10-ounce package frozen white or yellow corn
1 16-ounce can black beans, drained
1 4-ounce can diced mild green chilies
3 green onions, chopped
1 cup chopped fresh cilantro
1 cup whipping cream
1 8.95 ounce jar Fischer & Wieser Guacamole Starter - Just Add Avocados
1-1/2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 8-ounce packages shredded Monterey Jack Cheese
Garnish: Avocado slices, Black olives, Additional Guacamole Starter - Just Add Avocados, Sour cream, Cilantro
Preheat oven to 375 degrees Fahrenheit. Spray medium casserole dish with non-stick cooking spray. Remove husks from tamales; cut in half lengthwise. Place tamales in single layer in medium casserole dish. Sprinkle with frozen corn, black beans, chilies, green onions and 1/2 cup chopped cilantro. Whisk cream, Guacamole Starter - Just Add Avocados , chili powder, cumin, salt and pepper, and 1 package Monterey Jack Shredded Cheese in medium bowl to blend. Drizzle over casserole. Sprinkle remainder of cheese over the top.
Microwave directions: Cover casserole with paper towel and cook on high until it is hot and bubbling, about 15 minutes; rotate the dish several times, if necessary.
Conventional Oven directions: Bake casserole uncovered in 375 degree Fahrenheit oven until heated through and bubbling, about 35 minutes. Sprinkle with 1/2 cup more cilantro, if desired for garnish. Serve with avocado, sour cream, black olives and more Guacamole Starter - Just Add Avocados as well. Serves 6.
