Sweet Garlic and Ginger Wings

1 pound chicken wings
3 tablespoons lime juice
1½ teaspoon minced garlic
1 tablespoon sugar
2 tablespoons chopped cilantro stems
¼ cup peanut oil
2 tablespoons sesame oil
Peanut oil for frying
Chopped cilantro
 
Wash chicken under cold water, drain and pat dry. In a medium bowl, whisk together garlic, sugar and cilantro stems. Whisk in peanut oil, followed by sesame oil. Add chicken wings to bowl and marinate, covered, for 20 minutes. Preheat peanut oil in fryer to 360° and cook wings in batches until golden and crisp. Drain wings and place in a bowl. Completely cover with Dr. Foo's Thai Sweet Garlic & Ginger Sauce, turning to coat, and serve hot garnished with cilantro leaves. Serves 6-8.
