Smokey Pumpkin & Chipotle Mac N' Cheese

Pre-heat oven to 350F
7 tablespoons unsalted butter
6 tablespoons all-purpose flour
3 cups whole milk, warmed
8 oz. gruyere cheese, shredded
16 oz. elbow macaroni
¼ teaspoon salt
¼ teaspoon pepper
2 tablespoons parsley, chopped
2 tablespoons Panko bread crumbs
1 tablespoon parmesan, grated
1. Melt butter in a sauce pan over medium heat. Add flour and whisk continuously for about 2 minutes to cook flour. Slowly add warmed milk into mixture while continuing to whisk. Continue to whisk constantly for about 5 minutes until sauce thickens enough to coat the back of a spoon. Stir in cheese until smooth. Add Smokey Pumpkin & Chipotle pasta sauce, salt and pepper to taste. Mix again until smooth.
2. Cook pasta according to package stopping about 1 minute short of recommended time for al dente. Combine pasta and sauce in a large bowl until evenly coated.
3. Pour mixture into a 9x13 casserole dish and top with bread crumbs. Bake at 350F for approximately 30 minutes or until bread crumbs are a golden brown color. Top with chopped parsley if desired.
