Savory Fig and Onion Cream Cheese Stuffed Chicken

It’s comfort food. Gooey, savory, crunchy, creamy, cheesy goodness…... But there’s chicken and spinach. So you’re good.
4 chicken breasts
4oz cream cheese, softened
Small can of green chiles
⅓ c sliced green onion
1 c shredded mozzarella
1 c chopped fresh baby spinach
2 cloves of garlic, pressed or finely chopped
1 egg, beaten
½ to 1 c panko
½ tsp red pepper flakes
½ tsp salt
Cooking spray
Pound chicken breast thin, careful not to tear. Mix cream cheese, chiles, green onion, mozzarella, spinach, garlic and Fischer and Wieser Savory Fig and Onion Spread together in a bowl. Place beaten egg in a shallow dish such as a pie plate. Place panko on a large dinner plate and mix together with salt. Place ¼ of cream cheese mixture in the center of each chicken breast  and roll up tightly. Coat each chicken roll with egg mixture and then heavily coat with panko. Place on parchment lined baking sheet. Spray tops with cooking spray. Bake at 350 degrees for approximately 30 minutes or until center is 165 degrees.
