Raspberry Chipotle Turtle Bark

Sometimes you just need a little chocolate to get by.  Belgium chocolate provides the base for this sinfully good turtle bark.  Fischer and Wieser’s The Original Roasted Raspberry Chipotle Sauce elevates the classic turtle confection to new heights.  Bits of toffee add that buttery, caramel flavor to the roasted, raspberry goodness with a kick from chipotle.  You’ll want these on hand for the chocoholic moments.
8 ounces Belgian chocolate
2 cups shelled pecan halves
¼ cup plus ¼ cup toffee pieced
1-2 tablespoons bacon fat
In a heavy skillet, melt the bacon fat.  Butter can be used if preferred.  Bacon fat gives the pecans a smoky flavor.  Add pecans on low heat and toast until turning a little brown.  Pecans should be tender when done.  Add ¼ cup toffee bits and let melt, stirring frequently.
Remove pan from heat and let cool.  Add ¼ cup raspberry sauce and stir until all pecans are covered.  Let sit 10 minutes.
Melt the chocolate in the microwave at 30 second intervals until able to stir or melt over a double boiler until all chocolate is melted.  Stir well so that any small pieces of chocolate are incorporated.  Spread chocolate out on sheet pan.  You will not be able to cover whole sheet as the chocolate will be too thin.  Keep about ¼ or ½ “ thickness.
Sprinkle pecan mixture over chocolate on sheet pan until all the chocolate is covered.  Place pan in the freezer for 10 minutes.  Remove from freezer and drop or bang sheet pan on hard surface to crack. You can also lift with a spatula to pull away from sheet pan to crack.  Break into desired sizes and serve.
