Pumpkin Whoopie Pies

Bake Time: 10-13 minutes per batch
 
Ingredients, Cookie:
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon cinnamon
½ teaspoon salt
½ cup (1 stick) butter, softened
 1 ¼ cup sugar
2 large eggs, room temp.
1 cup pumpkin, canned
1 teaspoon vanilla extract
 
Ingredients, Filling:
4 ounces cream cheese, room temp.
6 tablespoons butter, softened
2 tablespoons Cherry Apple Chutney
1 ½ cups powdered sugar
 
 
1.Pre-heat oven to 350F. Sift the dry ingredients into bowl. Set aside. 
2.Beat butter and sugar in large mixing bowl until smooth. Add eggs one at a time
beating until fully incorporated. Add pumpkin and vanilla and mix fully. Slowly add
in dry ingredients mixing just until fully incorporated.
3.Grease or line sheet pans with parchment paper. Drop by heaping teaspoon and bake
for 10-13 minutes or until light golden brown edges.
4.Beat cream cheese, butter, and chutney until smooth. Slowly beat in powdered sugar
until light and fluffy.
5.Place a heaping tablespoon of filling on flat side of cookie. Top with a second
cookie.
