Major Cleaton's Dutch Oven Bread Recipe

Printable Version

Major Cleaton sent us this recipe for use with our Fischer & Wieser Old Fashioned Peach Preserves. Try this at your next cookout - as he says, "Those delicious preserves slathered on homemade bread - great! A little taste of home reminds us of why we're doing what we do." Major Cleaton, who is now with the 1st Medical Brigade at Ft. Hood, has been deployed in Iraq for three tours, and is now back Stateside.

Prep Time: 20 minutes
Cook Time: 15-25 minutes
3 cups self rising flour
3 tablespoons sugar
½ tablespoon finely chopped 1015 onion
¼ teaspoon chili flakes
1/8 teaspoon garlic powder
1 12-ounce can beer
1 16-ounce container sweet cream butter
2-3 jars (10.9 ounce) Fischer & Wieser Old Fashioned Peach Preserves

Mix all the dry ingredients together. Pour in beer. Mix together well; place on floured board.
Knead just a little; form dough into a ball. Flatten out and place in well greased Dutch Oven. Place oven over coals (1/3 coals on bottom and 2/3 on top). Allow to cook in hot coals approximately 10 minutes. Turn Dutch oven 180 degrees and then turn lid 180 degrees in opposite direction. After the bread has baked for 15-25 minutes, check it. The top should be golden brown and the bottom should THUMP when you hit it.

Slice and slather with sweet cream butter and Fischer & Wieser Old Fashioned Peach Preserves. Yield: approximately 10 slices.

*I present the above recipe as sent to us by Major Cleaton:

"Anyway, here is the Dutch oven bread recipe.

3 cups self rising flour
3 tbsp sugar
½ tbsp finely chopped 1015 onion
6 pack Lone Star Beer
¼ tsp chili flakes
1/8th tsp garlic powder
6 pack Milwaukee’s Best; Pabst Blue Ribbon; or other generic beer.

Mix all the dry stuff
Pour in 1 Lone Star
Drink 1 Lone Star
Mix up and lay on work surface
Knead just a little to form dough ball
Flatten out and place in well greased Dutch Oven
Place oven over coals (1/3 coals on bottom and 2/3 on top)
Drink another Lone Star
Wait
Turn Dutch oven 180 degrees and then turn lid 180 degrees in opposite direction
Give a Pabst to everyone who starts to wander over when they smell the bread cooking (It's rude not to have a beer for your guests….. but keep the Lone Star for yourself!)
After the bread has baked for 15-25 minutes (about 2 ½ Lone Stars) check it
The top should be golden brown and the bottom should THUMP when you hit it.
Cut it up and cover it with sweet cream butter and Fischer & Wieser Old Fashioned Peach Preserves."
