KD’s Peri Peri Steak Tacos

Bright flavors and colors come together to make a taco as lovely as it is delicious. You might think you need to stop by a food truck to satisfy your taco cravings but these will come together so easily you will never leave home for your taco fix again.
1-2 lbs beef steak
½ c olive oil
½ tsp sea salt
4 ripe roma tomatoes, chopped
¼ c diced red onion
1-2 T chopped fresh cilantro
fresh squeezed juice of one lime
ripe avocado, thinly sliced
cotija cheese
flour tortillas
Mix Fischer and Wieser Food Trk Fusion KD’s Peri Peri Sauce and olive oil together. Place marinade in steak in container and let marinade for 8 hours to overnight.
Mix tomatoes, onion and cilantro with lime juice and set aside.
Sprinkle a small amount of salt on each side of the steak just prior to grilling. Grill steak to medium rare and then let it rest for a few minutes so juices do not run out. Slice against the grain into strips. Warm flour tortillas (try making them yourself!). Place steak, salsa, avocado and crumbled cotija in tortilla.
