Gochujang Unchained Shrimp Tacos

Shrimp have been waiting their whole lives for this sauce. And what better way to deliver it to your mouth then in taco form?
12 -15 medium to large raw shrimp, peeled and deveined
corn tortillas
crumbled cotijta
1 avocado, diced
1 peach, diced
Juice of 1 lime
½ tsp salt
¼ c red cabbage
2 T diced red onion
1 T cilantro
⅓ c canned black beans, rinsed and drained
¾ c sour cream
1 T mayo
2 tsp lime juice
2 tsp cilantro
Dry shrimp and cover with Food Trk Fusion Gochujang Unchained Glaze. Set aside to marinate. If using wood skewers, place in water to soak.
Blend sour cream, mayo, lime juice and cilantro in food processor or blender and place in refrigerator.
Mix avocado, peach, lime juice, salt, cabbage, red onion, cilantro and black beans and set aside.
Add shrimp to skewers and grill each side 2-3 minutes until done. Warm corn tortillas on the grill over
low heat until warm.
Place a scoop of avocado peach salsa mixture on tortilla along with a few shrimp. Drizzle with sour cream sauce and crumbled cotija.
