Gochujang Marinated Chicken

Chicken breast can be dry if not cooked just right.  By marinating the chicken breast they remain moist.  I used  Fischer & Wieser Gochujang Unchained Glaze.  Not only did the chicken breast remain moist, it also tasted awesome.  Great flavor and just a little lingering spicy heat that was completmented by the sweetness from the the pineapple topping.
    2 lbs chicken breast
    ½ tsp salt
    ½ tsp pepper
    ½ c pineapple diced
    2 tbs pineapple juice
    ¼ c mango diced
    1 small sweet red pepper

Slice chicken breast in half horizontally Place chicken is a ziplock bag or bowl with a lid Pour in Fischer & Wieser Gochujang Unchained Glaze Let sit 30 minutes or longer Combine pineapple, pineapple juice, mango, and red pepper Place in fridge till chicken is done Preheat oven to 375 degrees Place chicken on a sheet pan and bake 20 to 30 minutes.  (pending how thick the chicken is) Plate the chicken and top with the pineapple mixture Serve with your favor sides like Fischer & Wieser KD’s Peri Peri sautéed peas Enjoy
