French Bread Pizza

1 cup zucchini spirals
1 cup butternut squash spirals
1 green bell pepper, thinly sliced
1 tablespoon extra-virgin olive oil
1 (12-14-inch) crusty French or Italian bread, sliced lengthwise
1 cup Mom’s brand Special Marinara
1 cup shredded mozzarella (or pizza blend)
 
Preheat oven to 425 degrees. In a pan, saute the zucchini, butternut squash and bell pepper until lightly caramelized, about 5 minutes. Cover the surface of the bread with Mom's Special Marinara, then with the mixed vegetables. Top with cheese and bake until cheese is melted and golden brown, about 10 minutes. Cut up and serves. Serves 4.
