Fajita Stuffed Avocados

Fajitas are a staple of Mexican cuisine and can be enjoyed in many different ways, including stuffed inside an avocado! These fajitas are a great gluten-free option as there is no tortilla, and they are light enough for seconds! Tender, juicy steak marinated in Fischer & Wieser’s “KD’s Peri Peri Sauce,” corn, roasted bell pepper and cilantro all join hands for a flavor explosion sure to bring you to your knees.
Prep Time: 5 hours (including marinating time)
Cook Time: 10 minutes
Servings: 4
 
1 flank steak
2 large avocados, halved
¼ cup cilantro, chopped
¼ cup sweet corn
1 red bell pepper, top and seeds removed
Lime, juice of
 
1.      In a large zip top bag, place your flank steak and cup of KD’s Peri Peri Sauce. Remove any air and seal tightly, coating the meat generously in the sauce. Refrigerate for several hours. Remove 30 minutes before cooking to let steak reach room temperature.
2.      After removing your meat from refrigerator, clean and heat your grill. Oil the rack.
3.      Place steak on grill and let cook for about 5 minutes on each side to achieve a medium-rare steak. Cook longer if desired. If there is enough space, place bell pepper down at the same time and cook for the same amount of time to get a nice char on the pepper.
4.      Remove items from heat and bring inside to let meat rest for 10 minutes before cutting.
5.      While meat is resting, prepare your avocados. Slice in half and remove pits. For a good filling space, remove some of the top layer of the avocado. Discard or set aside to eat.
6.      Slice your meat & peppers. Place desired amount inside each avocado half. Garnish with fresh cilantro and corn and drizzle with lime juice.
7.      Serve and enjoy!
