Chocolate Pasta with Spicy Peanut Sauce

Indulgence never tasted so good!  Dark richness of these cocoa noodles with the earthy, spicy, creaminess of the sauce featuring Fischer and Wieser’s Pecan Apple Butter and Homeplate Peanut Butter.  Both are easy to prepare and makes a great meal in minutes.  Your guests will think you cooked for days!  Paired with a medley of sautéed peppers and onions create a flavor sensation that is just short of addictive.
 
Chocolate Pasta
 
1 ¾ cups all purpose flour
2 large eggs
1 tablespoon dark cocoa powder
¼ cup sugar
water
 
Combine in stand mixer flour and cocoa powder with paddle.  Mix until thoroughly incorporated on low speed.
Add eggs one at a time.
Add water one tablespoon at a time being sure that dough forms into a ball.  If too sticky add a bit more flour.
Let dough rest for 20-30 minutes before working with it.
Roll dough out on floured surface and cut into thin strips.  Place on parchment to dry for at least one hour. Can leave to dry overnight and store in air tight container.
Place in boiling water and cook for 3-5 minutes.  Drain and let set till ready to serve.
 
Spicy Peanut Sauce
 
1 cup water
2 tablespoons soy sauce
¼ tsp salt
¼ cup chopped green onion, whole
1 tsp ground ginger or to taste
1 tsp ground ancho chili powder or to taste
1 ½ tsp ground red curry powder or to taste
 
Place peanut butter in a bowl with the water and whisk until incorporated
Add all other ingredients together and store in air tight lid until ready to use.
When ready to use heat until warm in a skillet.  If too thick add water to make the consistency of biscuit gravy.  Pour over noodles or meat. Can use as a vegetable dip or dipping sauce for crudités or chicken wings, etc.
 
Sautéed Bell Peppers and Red Onion
 
1 green bell pepper sliced thin
1 red bell pepper sliced thin
1 red onion sliced thin
2 tablespoons butter
1 tablespoon olive oil
 
Melt butter in skillet and add olive oil.  When butter bubbles add peppers ano sautéed until soft.  Add onions and sautéed on low heat until onions are translucent.  
Place noodles on plate and spoon peanut sauce over.  Put peppers and onions off to side with a slice of lime. Crush peanuts and sprinkle over top.  Serve warm.
