Chicken or Beef Fajitas

 Whether you use chicken, beef, or both, these fajitas are muy delicioso! They're great eatin', as well as great fun to grill while your friends are gathered round chompin' at the bit for a taste!

Prep Time: 20 minutes
Marinade Time: 15 minutes
Grill Time: 15-20 minutes
1 2-pound beef skirt steak or
4 boneless, skinless chicken breasts
2 packages mesquite marinade
1/2 cup water
1/2 cup vegetable oil
Fajita Seasoning to taste
16 flour or corn tortillas, as desired
2 cups shredded iceberg, Romaine, or curly leaf lettuce
1/2 purple onion, diced
1 tomato, diced
3/4 cup shredded Monterey Jack Cheese
1/2 to 3/4 cup Fischer & Wieser Salsa A La Charra Salsa
Garnishes: guacamole, sour cream, black olives, sliced avocadoes

Prepare grill for cooking. Marinate skirt steak or chicken breasts in mesquite marinade mixed with water or vegetable oil, 15 minutes. Sprinkle with fajita seasoning to taste. Grill skirt steak until meat thermometer inserted in thickest part reaches 145° for 15 seconds; grill chicken breasts until meat thermometer inserted in thickest part reaches 165° for 15 seconds. When done, remove to cutting board and slice into 1/2" slices. Heat tortillas on griddle or microwave (wrap in paper towel and heat 25 seconds or so, depending on your microwave). To serve, place warmed tortillas, lettuces, onion, tomato, cheese and Fischer & Wieser Salsa A La Charra Salsa in serving containers. Allow guests to prepare their fajitas as they desire. Add garnishes as desired. Serves 8.
