Chicken & Rice with Thai Sweet Garlic & Ginger Sauce

INGREDIENTS
2 cups Thai Jasmine rice 
2 cup Chicken stock
2 cup water
1 tsp Salt
½ tsp White or black pepper
2-3 pcs Fried chicken breasts or chicken tenders (freshly made or leftover)
1 jar of Dr. Foo’s Thai Sweet Garlic & Ginger Sauce
2 tbsp Cilantro                                                                                  
1 tbsp Diced green onion
6-8 slices Cucumber, cut to ¼ inch thick 

 

INSTRUCTIONS
1. Rinse rice in a bowl, drain and transfer to rice cooker.

2. Add chicken stock, water, salt and pepper, mix well, cover with lid, turn on rice cooker. It takes about   15-20 minutes for the rice to cook.

3. Warm leftover or use freshly fried chicken breasts, slice in an angle 1/4 inch thick.

4. When rice is cooked, scoop a good portion per each plate for individual or a large platter for sharing.

5. Place 5-6 slices of warm fried chicken breast on each plate; or arrange all chicken over the rice on the platter.

6. Pour Dr. Foo’s Thai Sweet Garlic & Ginger Sauce over the chicken and rice and top with diced green onion and cilantro.

7. Serve with Dr. Foo’s Thai Sweet Garlic & Ginger Sauce for extra dipping and cucumber slices
