Cherry Apple Chutney Stuffing

Here's a little twist to a classic holiday dish that can be enjoyed all year long. The sweet and savory combination of this stuffing will pair well with poultry or pork and has a unique flavor that will surprise your taste buds with a wonderful fruity flavor and an inspiring spice combination.
Prep Time: 15 minutes Cook Time: 50 minutes
½ stick unsalted butter
1 cup onion, diced
1 cup celery, diced
1 cup smoked sausage
2 teaspoons fresh sage, chopped
2 teaspoons fresh thyme, chopped
6 Tablespoons Cherry Apple Chutney
1 ¼ chicken stock
1 egg
4 tablespoons parsley, chopped
12 cups French bread, 1” cubes
Salt and pepper to taste

Pre-heat oven to 375F. Melt butter in sauté pan over medium heat. Add onion and celery, sauté until onion and celery start to soften. Add sausage, sage, thyme and continue to sauté for another 2 minutes. Add chutney and chicken stock and mix until combined. Season with salt and pepper. Remove from heat and set aside. In large bowl, whisk egg and parsley together. Add cubed bread and sautéed mixture. Combine until all liquid is absorbed and bread is uniformly coated. Add mixture to lightly greased casserole dish and cover. Bake for 30 minutes. Remove cover and bake an additional 20 minutes or until edges of bread start to brown and crisp.
