Beet and Goat Cheese Salad

This salad is beautiful and flavorful and is the perfect side dish or can stand on its own.
4 small red beets
3-4 cloves garlic, sliced
spring mix salad greens
1 oz goat cheese
olive oil
1 ½ T olive oil or other salad oil
2 tsp red wine vinegar
Wash and trim beets and cut in half. Place in saucepan covered in water and bring to boil. At low boil, cook until fork tender. Drain and set aside. Whisk Fischer and Wieser Food Trk Fusion KD’s Peri Peri Sauce with olive oil, then whisk in red wine vinegar. Smash beets with meat mallet or palm of your hand. Heat olive oil in pan over medium heat. Add smashed beets and garlic to pan, turning once or twice. Remove when they are starting to brown. Arrange greens on plate and drizzle with vinaigrette. Place a scoop of beets and garlic on greens and crumble goat cheese over the top.
