Baked Mostaccioli

16 oz mostaccioli
16 oz ground hot country sausage
2 oz chopped fresh spinach (about ½ of a small bunch)
1 small onion, chopped
¼ tsp crushed fennel
8 oz jarlsberg cheese, shredded
Chopped parsley, to garnish
Preheat oven to 350°.
Cook pasta al dente, rinse and drain.
Saute onions until just softened, add sausage and crushed fennel and cook until sausage is cooked through.
Add spinach and combine cooking another 1-2 minutes.
Add pasta and pasta sauce, combine well.
Layer half of the pasta mixture in a 9x13 baking dish.
Sprinkle half of the shredded cheese on top.
Create another layer with remaining pasta and top with remaining cheese.
Bake, uncovered, for 20 minutes.
Let rest 5-10 minutes.
Garnish with chopped parsley.
